Simple, gluten-free cookies with ready mix gluten-free flour. It can be left plain or decorated with chocolate or icing. Please note that all the ingredients are gluten-free.
1 x vanilla pudding sugar free.
200 grams mix flour (Gluten free cake flour or plain flour) I used Glutagon mix plain flour.
75 grams of white sugar.
125 grams butter.
1 x large egg.
Extra flour for dusting (all gluten free)
and chocolate to decorate.
Add the pudding powder and mix flour, make sure it weighs 50 grams combined.
Add flour and sugar. Mix.
Add soft butter, cut into pieces and the egg. knead by hand till you have a fairly uniform, thick dough. Wrap the dough in cling film and refrigerate for about 1 hour or more.
Remove the cold dough from the fridge and place on a sheet of pastry baking paper, roll it to a thickness of about 3 mm and cut out any shape.
Arrange the cookies at intervals on a baking tray lined with baking paper. (You should be able to get at least two trays of cookies out of the mix).
Bake one sheet after another in the preheated oven for about 8 – 9 minutes. At 200 ° C. After baking allow to cool and get ready to decorate with your own taste.
Melt the chocolate in a bowl of warm water and then place it in freezer bag. Cut off one end and decorate the cookies.
